The cozy weather of spring is a perfect match to head into the kitchen for a quick Latino recipe especially taking into a great consideration that a variety of fruits and vegetables are flourishing this time of the year.

A popular Latin American seafood recipe primarily consisting of fresh raw fish preserved with either lemon or lime along with chili peppers for added zest. This dish which is served raw and fresh can also have an option of adding finely sliced onions, salt, and cilantro. The preference of adding the tropical grape fruit brings in a different interpretation of this coastal region favorite.

Ingredients:

3/4 lb tilapia

6 ounces lime juice

8 ounces coconut milk

1 teaspoon minced garlic

1 teaspoon minced jalapeno

1 teaspoon minced ginger

1 medium shallot,

1 cup chopped grapefruit

chopped cilantro

grounded black pepper

Preparation and Serving Instructions:

Slice the tilapia into very thin slices then mix it with lime juice, garlic, jalapeno, ginger, shallot, and black pepper marinade in a large wide bowl. Let it stand for 30 minutes. Add grapefruit and garnish with chopped cilantro. Serve right away.

2. Chimichurri using parsley

This green sauce is prepared by combining chopped parsley, vegetable oil, oregano, powdered garlic, and white vinegar. The parsley-based sauce which has its roots in Argentina is popularly used as a condiment for grilled meat.

Ingredients:

1 cup parsley, removed of its thick stems

3-4 garlic cloves

2 tablespoons of either fresh or dried oregano leaves

1/2 cup olive oil

2 tablespoons red or white wine vinegar

1 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes

Preparation and Serving Instructions:

Chopped parsley, oregano, and garlic until they are all in fine condition. If a food processor is available to use one. Place combined ingredient in a small bowl and then add olive oil, vinegar, salt, pepper, and red pepper flakes while occasionally stirring. Serve directly or set aside and refrigerate.

3. Asparagus & Serrano Ham, using asparagus

Asparagus, when partnered with this Spanish ham, is quite a tasty feast and can be either grilled, steamed or roasted. This specialty ham is widely available in all Spanish and Latin food shops.

Ingredients:

1 pound asparagus (young and tender, washed)

2 tablespoons olive oil

2 tablespoons water

2 shallots (minced)

1/4 pound thinly sliced serrano ham

Preparation and Serving Instructions:

Removed the chunky ends of the asparagus. Heat oil and water in a large frying pan. Cook asparagus in the frying pan for 3 to 5 minutes or until water is evaporated. Immediately put the shallots and mixed it well with the now tender asparagus. Serve asparagus in a platter. Cook the Serrano ham in the same frying pan for about 45 seconds. Remove the meat and placed next to asparagus and serve directly.

5. Guacamole, using avocado (recipe courtesy of Chef Tips)

Guacamole is an avocado-based dip or salad. This is quite an appropriate recipe to make as avocadoes are plentifully on the West coast during the spring season. An advice to be reminded always is to always pick them fresh.

3 avocados - peeled, pitted, and mashed

1 lime, juiced

1 teaspoon salt

1/2 cup diced onion

3 tablespoons chopped fresh cilantro

2 roma (plum) tomatoes, diced

1 teaspoon minced garlic

1 pinch ground cayenne pepper

Mashed and blend together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. For best results, placed the guacamole inside a refrigerator for an hour. It can also be served immediately.
